Fermentasi merupakan salah satu proses yang membutuhkan kestabilan kondisi operasi. Jika kondisi operasi tidak terpenuhi maka akan mempengaruhi produk fermentasi tersebut. Penilitian ini berfokus pada perancangan dan konstruksi fermentor dengan pengendali pH dan temperatur. Sensor pH menggunakan analog sensor DF-Robot SKE 169. Pengendalian pH digunakan pompa dosing untuk mengalirkan asam atau basa yang terhubung melalui relay yang dikendalikan oleh mikrokontroller. Sedangkan sensor suhu menggunakan termokopel PT-100 dengan selisih pengukuran terbesar 3OC. Tujuan pembuatan alat ini adalah untuk mengoptimalkan proses fermentasi. Nilai kestabilan proses pengendalian pH adalah -0.06 sampai 0.08 dengan toleransi pengukuran pH 0.1.
